Ingredients:

  • 4 cups watermelon

  • 2 tomatoes (or 1 1/2 cups cherry tomatoes)

  • 1 cup cucumber (cut into large chunks)

  • 1/2 cup fresh basil leaves

  • 1/2 cup red onion

  • 1 yellow bell pepper (or orange bell pepper, cut into large chunks)

  • 2 Tb lime juice (juice from one large lime)

  • 1/2 tsp black pepper

  • 1/4 tsp salt

  • 1 jalapeño (optional)

Directions:

  1. Place ingredients in a food processor and pulse until well combined. (You want it to still have a slightly chunky texture.)

  2. If you want to add a little kick, you can add a jalapeño (with or without the seeds).

  3. Chill in the refrigerator for 30 minutes (up to one hour) for the flavors to come together.

  4. Serve and enjoy!
