Gazpacho is a Spanish-style soup made with tomatoes and other spices, typically served cold. It's especially delicious on a hot summer day!

Ingredients:
4 cups watermelon
2 tomatoes (or 1 1/2 cups cherry tomatoes)
1 cup cucumber (cut into large chunks)
1/2 cup fresh basil leaves
1/2 cup red onion
1 yellow bell pepper (or orange bell pepper, cut into large chunks)
2 Tb lime juice (juice from one large lime)
1/2 tsp black pepper
1/4 tsp salt
1 jalapeño (optional)
Directions:
Place ingredients in a food processor and pulse until well combined. (You want it to still have a slightly chunky texture.)
If you want to add a little kick, you can add a jalapeño (with or without the seeds).
Chill in the refrigerator for 30 minutes (up to one hour) for the flavors to come together.
Serve and enjoy!
