Shepherds Pie

Want to try something different for St. Patrick's Day?

How about this hearty and comforting Shepherd's Pie! Not a fan of Lamb? You can substitute Ground Beef and make a Cottage Pie instead. Either way, it's a tasty meal the whole family will love.

Ingredients:


FOR LAMB & VEGETABLES:

FOR MASHED POTATOES:

  • 2 lb. potatoes red potatoes

  • 1/2 cup milk

  • 1/4 cup butter

  • salt and pepper to taste


Directions:


MASHED POTATOES:

  1. Scrub and dice potatoes. Boil until tender in lightly salted water, about 15 minutes; drain.

  2. In a small saucepan, heat butter and milk over low heat until butter is melted.

  3. Using a potato masher or electric beater, slowly blend milk mixture into potatoes until smooth and creamy. Season with salt and pepper to taste.

LAMB & VEGETABLE FILLING:

  1. Preheat your oven to 400*F.

  2. Saute the onion and garlic in a large oven-safe saute pan.

  3. Add the mixed vegetables . Cook for 8-10 minutes or until the meat is browned. Make sure to break up the meat using your spatula or wooden spoon.

  4. Add the chicken broth, tomato paste, Worcestershire sauce, garlic and herb blend. Simmer for a couple minutes.

  5. Turn off the stove and use the back of your spatula or wooden spoon to spread the meat mixture into an even layer.

  6. Dollop the mashed potatoes on top of the meat and use spoon or spatula to flatten the edges. Bake the Shepherd’s pie for about 25-30 minutes, until it’s slightly golden. Enjoy!


NOTES:

If I can find carrots at the farmers' market, I use 2-3 carrots and about 1 cup of frozen peas instead of the mixed vegetables. I use our Garlic and Herb Blend, if you don't have that available, I suggest using rosemary, thyme, salt and pepper to taste.

I use fresh garlic from Orie's Farm Fresh in all my recipes. I use Better Than Bullion to make my broth if I don't have home-made broth available.

If using ground beef instead of lamb, use beef broth instead of chicken broth.
