Kick your holiday meal up a notch with COFFEE!

Ingredients:
1 - 12 pound, bone-in prime rib roast (5 bones)
1/3 cup coffee (finely ground)
Directions:
In a bowl, combine 3 Tbsp. Coffee Chile Rub and ground coffee. Rub seasoning all over prime rib. Turn the roast bone-down and let stand at room temperature for 30 minutes.
Preheat oven or smoker to 450*F and roast for 15 minutes.
Turn down to 325*F and roast for another 2 1/2 hours, until temperature registers 125*F for medium-rare.
Transfer roast to a carving board and let rest for 20 minutes. Scrape off any excess coffee rub. Carve the meat in 1/2" thick slices and serve.
